Organic extra virgin olive oil ZIRO from Sitia (in Crete island) is produced in limited amounts, with excellent organoleptic ingredients in October of each year. Intensely fruity, with a slightly bitter and spicy taste and a smooth aftertaste of freshly cut grass and green bananas. It is ideal for salads, dressings, fresh fish and potatoes.
It has the following characteristics:
Aromas of flowers – exotic fruits – olive leaves and pear.
In the mouth you feel the freshness of the unripe olive, with the pepper and olive leaves giving the bitter and spicy notes that characterize it.
Ideal food combinations: Fresh fish – potato – spreads – chocolate mousse.

The harvest season begins in October when the fruit is still unripe and is carried out solely by mechanical means. The oil extraction is performed on the day of harvest following the cold pressed method in a cooperating two-phase olive mill. The olive oil is stored in stainless steel tanks under ideal temperature conditions to preserve its organoleptic properties and its duration over time.

Cocktail ingredients:
50ml gin
7ml dry vermouth
drops of bitter
olives
Fill the shaker halfway with ice and add the gin and vermouth.
Stir lightly until the drink is chilled and strain into a martini glass. Garnish with 1-2 olives
